Valentine Fudge...Only Two Ingredients!


 
This yummy strawberry fudge is just perfect for Valentine's Day and the best part is that it only has two ingredients in it.   It's so pretty and very tasty also.  So if you want to make your loved ones something homemade instead of buying the box of candy, this is a great idea.   You can also use any flavor frosting and change the flavor of the chips to make different flavors.  You could use vanilla frosting and chocolate chips for chocolate fudge or white chips and vanilla frosting for white chocolate fudge or add a few drops of flavoring to that to make it whatever flavor you want.  Here is all you will need:

1  16 oz. can of strawberry frosting
1  12 oz. bag of white chocolate chips
Valentine sprinkles

Place the chips in a glass bowl and microwave on hi for 1 minute and 30 seconds, stir.  Microwave for about 1 more minute and stir again.  Do this until the white chips are completely melted.  This depends on your microwave.  Mine took about 2 minutes.  

Remove the top and the aluminum from the top of the frosting.  Microwave it for about 20-30 seconds.  Be sure to remove all of that foil or you will have fireworks in the microwave.  There is a reason I know this!  Stir the frosting into the melted chips and blend really well. 

Pour this into a 8"x8" or a 9"x9" pan that you have lined with wax paper.  You can spray the dish with nonstick spray if you don't have wax paper, but I think the paper works better.

Sprinkle immediately with your Valentine sprinkles.  If you don't do this right away, they will not adhere and will fall off easily when you cut it.  Chill for at least an hour or two.  Cut in small squares and store in an airtight container.

Chococlate Chip Sweetheart Cupcakes!


 
These adorable cupcakes are just perfect for Valentine's Day and they are much easier to create than anyone would ever imagine.   The chocolate chip cupcake itself is just to die for and with the addition of homemade butter cream, you will definitely be making someone something special! 

 Here is what you will need:
 
Cupcakes
1 (18.25 oz.) yellow cake mix
1 8 oz. carton of sour cream
1 (3.5 oz.)  pkg. instant chocolate pudding mix
1/2 cup oil
1 Tbs. vanilla
4 eggs
1 8 oz. pkg. chocolate chips
1/2 cup chocolate syrup
 
Butter Cream Frosting
8 cups confectioners sugar
1 cup butter, softened
1 cup shortening ( used Crisco)
1/3 cup milk
2 tsp. vanilla
a few drops of red food coloring
 
Preheat oven to 350 degrees.
 
Mix the first six ingredients.  Fold in the chocolate syrup and the chocolate chips.  Place 18 cupcake papers in muffin tins.  Pour the cups about 3/4 full.  Place in preheated oven and bake for 20 - 22 minutes.  Don't over bake them.  A pick inserted in center should come out clean.
 
Prepare the butter cream frosting.  Beat powdered sugar, butter and shortening in a large bowl.   Beat milk and vanilla flavoring.  If it's too stiff beat in more milk a few drops at a time.  Add a drop or two of red food coloring just until the frosting is a light pink.
 
After the cupcakes have cooled, cut the tops off of them straight across at the line of the edge of the cupcake paper. 
 
 Take the tops and cut a heart shape out of the center.  I did this with a small cookie cutter.
  You can also use a stencil cut out of stiff paper or cardboard and cut around it with a sharp knife.  Frost the tops of the base of the cupcakes and sort of mound it in the middle. 

 
 Press the tops back on the cupcakes and press down so that some of the frosting sort of oozes up into the heart shape.

Easy Peasy Red Velvet Cookies with Cream Cheese Frosting!




These Red Velvet Cookies are so easy, it's ridiculous, really!   Anybody can make these and they are perfect to get the kids involved with.  Buy some cute Valentine sprinkles of various shapes and let them go crazy.  Of course the temptation to eat them before they ever get the frosting on them, much less the sprinkles will be hard to resist.  These are so good!  This is what you will need:


1 box Red Velvet cake mix (be sure to get the 18.5 oz. size)
2 eggs
6 Tbs. butter, melted
1 tsp. vanilla

Cream Cheese Frosting

1  8oz. package cream cheese, softened
4 Tbs. butter, softened
1 lb. powdered sugar
1 tsp. vanilla


Mix cake mix, butter, eggs and vanilla until well blended.  You can mix this with just a whisk or large spoon.  Spray a heavy cookie sheet with nonstick spray or line it with parchment paper. 

Preheat the oven to 350 degrees.

Scoop about 1 Tablespoon out and roll into a ball about the size of a small walnut. Place on the prepared cookie sheet and just slightly press down to flatten a little. Bake for 9-10 minutes.   They will just be starting to crack around the edges and on the top.  That's the way they should look. 

Remove from oven and let sit for 2-3 minutes before removing to a rack to cool.  Let cool completely before frosting.

Make your cream cheese frosting while the cookies cool.  Beat cream cheese and butter until smooth.  Beat in the powdered sugar and add vanilla.

You can chill the frosting while the cookies cool and it goes on the cookies and sets up a little easier or use it at room temperature...whichever works for you!  Sprinkle the tops with sprinkles or colored sugar or just leave plain!
