Creamy Cucumber Salad!




This is a really simple, but light and fresh tasting salad!  This is really good when cucumbers are fresh from the garden, but with the availability of cucumbers pretty much year round in the supermarkets, you can serve this anytime.   It has just a hint of fresh dill, which is optional, but I think is key to the flavor.   Here is what you will need for this:


3/4 cup sour cream
2 Tbs. sugar
3 Tbs. white vinegar
salt and pepper to taste
4 medium cucumbers, peeled and sliced
1 medium sweet onion, cut in thin slices and separated into rings
1 Tbs. minced fresh dill (optional)

In a bowl, whisk together the sour cream, sugar, white vinegar, and salt and pepper.   Add the cucumber slices, onion rings and the dill.  Toss to coat all of the vegetables.  Cover and refrigerate for at least 2 hours before serving!


This is really good with grilled foods or other fresh garden vegetables!

  1. Do you know of any other cucumber salads that have the creamy but not vinegary? I had some at a party one time and have never seen a recipe that I thought was it. This is close but I'm sure it didn't have any or very little vinegar. Your recipes are the bomb!! Love you and your stories too! Thanks

    1. Karen....I make my mom's recipe that has mayonnaise, milk, white vinegar and sugar. Can't tell you the measurements becuz there isn't any. I just use about 1 cup of mayo, whisk in milk until creamy/runny, add a little bit of vinegar to give it a tang and a few TBSP of sugar to give it a sweetness. Pour over thin sliced cucumbers and onions and let sit overnight (very important). Taste in the morning and make adjustments. Hope you enjoy!

    2. Cucumber-Sour Cream Salad
      4 medium cucumbers, 1 1/2 cups sour cream, 1 small clove garlic, minced, 2Tbsp salad oil, 2 tsp sugar, 1 tsp salt, 1 tsp white wine vinegar, 1/2 tsp dill weed.
      Pare cucumbers and slice thinly in large bowl. Stir together remaining ingredients, except dill weed; pour over cucumbers and toss lightly. Sprinkle with dill weed. Cover and chill. Just before serving, toss carefully. Serves 8 to 10. Does not have vinegary taste. I hate vinegar. Enjoy

  3. Karen, I have a recipe without vinegar. Slice cucumbers, onions, and thena few tomatoes into smaller chunks. Salt & pepper to taste. Then barely stir in Ranch dressing and leave in frig for several hours. The cucumber water and Ranch combine into light creamy sauce!
