Lemon Fluff Salad!

 
 
This "Lemon Fluff Salad" is a really light and pretty gelatin salad that is perfect for Spring and a holiday like Easter.  Like so many things we call a 'salad' in the South, this can be served as a light dessert on the dessert buffet or along with a meal.   

For those who are watching their diets, this is lighter than a most desserts and will still make you  feel like you had something sweet! 
  
Here is what you need for this "salad":
 
1 (3 oz.) lemon gelatin
1 (8 oz.) can crushed pineapple
2 bananas sliced
3/4 cup sugar
1 Tbs. flour
1 egg beaten
1 tsp. vanilla
1 (8 oz.) container frozen whipped topping
1 cup pecans, chopped
 
Prepare the gelatin as the package directs.   Drain the pineapple and reserve the juice.  Add the drained pineapple and sliced bananas to the gelatin. 
 
Pour into a 11"x7" dish or a 9"x9" dish.  Place in the refrigerator and chill until set.

 
Combine sugar and flour in a saucepan.   Add in egg and reserved pineapple juice. Cook, stirring constantly until thickened.  Remove from heat and stir in vanilla.  Set aside to cool.  Once cooled fold the cooled mixture into the frozen whipped topping.  Spread over the gelatin layer. 
 

Sprinkle with the chopped pecans.
 

Chill until ready to serve.  Cut in squares to serve!
 
 
 



Aunt Bethany's Pineapple Lime Salad!


This is an old, old recipe people in the South have been making for years...probably since the invention of fruit flavored Jello, actually.   I think it probably doesn't get made as much as it once did, but I still get requests for a recipe for it.  There are several variations on the recipe also.  

 I like this one because it's not quite as sweet and it sets up nice and is very colorful.  You can gel this in a decorative mold or just in an 8"x8" dish and then cut it in squares to serve.   With it's pretty color, it's a great holiday salad for both Easter and Christmas! 

The whole time I was making this, I kept thinking about the movie "Christmas Vacation" and Aunt Bethany and her lime Jello mold she wrapped up as a present!  Watching "Christmas Vacation" is a tradition in our family (several times during the holidays) and it's just not the start of the holiday season until we do!   So in honor of Aunt Bethany, this is "Aunt Bethany's Pineapple Lime Salad"!   

Here is what you will need:

1 (6 oz.) pkg. lime gelatin (can use sugar free)
1  1/2 cups boiling water
1 (8 oz.) can of crushed pineapple (do not drain
1/2 cup chopped pecans
1/2 cups chopped maraschino cherries
1 (8 oz.) pkg. cream cheese, softened
1/4 cup mayonnaise
2 cups frozen whipped topping

Pour boiling water over gelatin and stir to dissolve.  Set aside to cool.  When it starts to thicken, add the pineapple, nuts and cherries and blend. 

With an electric mixer beat the cream cheese and the mayonnaise until fluffy.  Blend in the whipped cream. 

Fold the cream cheese mixture into the gelatin mixture.  Blend and pour into a mold or an 8"x8" dish.    Chill until completely set. 



 Cut in squares and serve!  This looks pretty with a dollop of whipped cream!




Creamy Peach Salad!

  

This "Creamy Peach Salad" is so cool and refreshing and it's pretty enough for a special occasion dinner.  It's also really easy and can be made in advance, which is always great!   You can use canned or fresh peaches in this also.  If you have fresh peaches, by all means, use them. This is also very easy to make sugar free! 


 Here is what you will need:

2 (3 oz.) pkgs. peach gelatin
1 cup boiling water
1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1 (15 oz.) can peach slices, drained and diced  (can use an equal amount of fresh peaches)
1 (8 oz.) can of crushed pineapple, drained
1 cup lemon-lime flavored soda (like Sprite or 7-Up)
1/2 cup pecans, chopped
1 (8 oz.) carton of frozen whipped topping, thawed
whipped cream for garnish


Dissolve gelatin in water.   In a bowl, whip cream cheese until it's fluffy and then mix in the gelatin mixture.  Beat until smooth.  Stir in the peaches, pineapple, lemon-lime soda, vanilla and nuts.   Fold in the whipped topping.   Pour into a 9"x13" dish and chill for 3-4 hours or overnight.   To serve, cut in squares and garnish each square with a dollop of whipped cream. 
 





Cool and Creamy Salads and Desserts!


This is the time of year when you want cool and creamy dishes that do not require hours of cooking in the oven or standing over a hot stove.  I decided to take some of the most popular ones on the site and put them all here in one place for you.  These are salads or desserts that we tend to make over and over in my family, because no one gets tired of them.  I hope you and your family will enjoy some of them also.  They are not complicated or fussy and some don't even require actual cooking, but they are so good.

Blueberry Lemon Trifle!










Orange Buttermilk Salad!


 
 
This is one of those "salads" that is really almost a light dessert, but however you serve it, it's really delicious.  I am not a person who is really crazy about the congealed, creamy, fruity salads, but this one is one of my favorites.  If you are one of those folks who doesn't care for buttermilk, don't worry, you will never know this has buttermilk in it when it's all mixed together.   Here is what you need for this "Orange Buttermilk Salad": 
 
 
1  8 oz. can of crushed pineapple in syrup
1  5 oz. box of orange flavored Jello gelatin
2 cups buttermilk
1 8 oz. container of whipped topping, thawed
1 (11oz.)  can mandarin oranges, drained
1 cup chopped pecans or walnuts
 
Place pineapple with it's juice in the microwave and cook until it boils...about 2 to 2 1/2 minutes in most microwaves.   Pour orange gelatin in and mix.  Let this cool to room temperature.  Whisk in the buttermilk. Fold in the whipped topping, mandarin orange segments and the nuts.  You can pour this into an 8 cup mold or in a pretty glass serving bowl.  Cover and chill for at least 4 hours or overnight is best. 
 
This basic recipe can be easily altered by to make different flavors.  For example by using cherry gelatin and a cup of chopped maraschino cherries, you can change this to a Cherry Buttermilk Salad.
