Snickers Salad!

This "Snickers Salad" is more dessert than salad, but in the South we like to call such creamy concoctions 'salads'.   I would say it's to make us feel less guilty about eating such things, but we don't live with a lot of guilt when it comes to food to begin with...lol.  I like that about southerners!

This is a 'salad' that most anyone will eat... the kids will love it as well as the adults.   We call this "Snicker's Salad", but I actually think you could make it with any type of candy bar you like!

Here is what you need:

8 oz. cream cheese, softened
1 (3oz.) pkg. instant vanilla pudding
2 cups cold milk
1 tsp. vanilla flavoring
8 oz. frozen whipped topping
4 medium size apples, unpeeled and diced
20 fun sized Snickers candy bars or 4 regular size, chopped in pieces  (you can use another candy bar, like Milky Way, Reeses, Three Musketeers if you prefer that)

With a mixer beat the cream cheese.  Add the pudding mix, milk and vanilla and beat just until it starts to thicken.

Fold in the whipped cream, apples, and candy bar pieces until it is all mixed together.

Fold together to combine and place in a pretty serving bowl.  Garnish the top with some of the apple and candy bar pieces!   Refrigerate 1-2 hours before serving to allow it to set up some!!!

Enjoy!  It's amazing! This is great for holidays!

Millionaire Salad!!!

Remember the recipe for Millionaire Pie?  That rich and wonderful concoction we've been making since at least the 1970's in the south and serve mostly for holidays!    I decided to make it one day and then realized that I didn't have any graham crackers for the crust, so I thought why not make it a salad!   You know those sweet 'salads' we love to make for holidays , potlucks, church suppers, or just because in the south!!!

I must say, the results were wonderful.  I am not a huge fan of these sorts of recipes sometimes, because they are heavy on fruits I cannot or don't eat that much and even I loved this one!   My daddy said it was one of the best things he's eaten in a long time and he's a picky one at times!

It's also super easy which is always  a good thing!     This is perfect for the holidays and all ages seem to love it!

Here is what you will need for this:

1 (8 oz.) block of cream cheese, softened to room temperature
1 (14 oz.) can of sweetened condensed milk
1 tsp. vanilla flavoring
1 (20 oz.) can of crushed pineapple, drained well
1 (16 oz.) frozen whipped topping, thawed
2 cups miniature marshmallows
1  1/2 cups pecans or walnuts, chopped and divided
1 cup maraschino cherries, drained and chopped (leave a few whole to garnish the top)

In a mixing bowl, with an electric mixer beat the cream cheese until smooth.  Add the sweetened condensed milk and beat until combined.  Beat in the vanilla.  With a large spoon, stir in the crushed pineapple.

Fold in the whipped cream and miniature marshmallows.  Add 1 cup of the pecans or walnuts, reserving the other half cup to garnish the top.   Add the chopped maraschino cherries.

Pour into a large serving bowl and garnish the top with some of the whole cherries and the other half cup of pecans or walnuts!!!  Chill in the refrigerator for 2-3 hours or overnight and then serve!  This serves 8 - 10 people easily!

Pineapple Fluff!

This "Pineapple Fluff" is one of those yummy dessert salads we love so much in the south!  I really liked this one, because it wasn't overly sweet and little lighter!   My husband loves anything pineapple, so he really liked it!  I served this for Easter!   It's also perfect for warmer weather, when you want something sweet, but don't want to turn the oven on!

Here is what you will need:

1 (8 oz. pkg.) cream cheese, softened
3/4 cup confectioner's sugar
1 tsp. vanilla
1 (20 oz.) can of crushed pineapple, drained well
1 (15 oz.) can of  mandarin oranges, drained
1 cup chopped walnuts or pecans, divided
1 (8 oz.) container of frozen whipped topping, slightly thawed

Beat the cream cheese with the confectioner's sugar until it's fluffy.  Add the vanilla and blend it in. Add the mandarin oranges and the pineapple and beat on low just to combine and break up the orange segments a little.  Add half of the nuts to the mixture.  Fold in the whipped topping until the it is all combined.  Pour into a serving dish or bowl and sprinkle the other half of the nuts on top.  Refrigerate for 2-3 hours before serving!

This will be great for Spring and Summer events!
