Mama's Tuna Salad!!!


During the summer I like to keep things like tuna salad, chicken salad, and pimento cheese on hand in the fridge so we can grab a quick meal or snack when we are busy doing so many outdoor activities.  It's also a great way to keep the heat out of the kitchen when it's in the 90's here!!!   This tuna salad is just very basic and the way my mother has made it for years and how I make it also!!! 


I think the key to good tuna salad is good tuna and keeping it pretty simple.   We prefer the white Albacore Tuna in water for our tuna salad!!!  It just has  a better flavor and since you are going to use mayonnaise in this, you don't need all of that oil. I love tuna salad grilled on good bread or served in a tomato cup when tomatoes are so good in the summer.   

Here is what you will need for this tuna salad:

1 (12 oz.) can white albacore tuna, drained
3 hard boiled eggs, diced
1/4 cup sweet pickles, diced fine (We like to use the Bread and Butter Pickles )
1/3 cup celery, diced fine
1/3 cup mayonnaise
1 tsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
dash of celery salt



Grilled Tuna Salad Sandwich...yummy!!!
