Cheesy Buffalo Chicken Dip!



This 'Cheesy Buffalo Chicken Dip' is the perfect dip to serve when you want buffalo chicken wings, but don't want the mess of eating and serving them.  This goes together fairly quickly if you use either a rotisserie chicken or even a good quality canned white meat chicken works well. 

 Here is what you will need:

1 rotisserie chicken, meat removed and chopped or 2  (12.5 oz.) cans white chicken meat, drained or about 3 roasted chicken breasts, diced fine
1 cup buffalo wing sauce (I used Texas Peete's, but you could use Frank's or whatever you prefer)
2 (8 oz.) pkgs. cream cheese, softened
1 pkg. dry ranch dressing mix
1 cup chunky blue cheese dressing
1/2 cup sour cream
1/4 tsp. celery salt
1/4 tsp. garlic powder
1 cup shredded Mozzarella cheese
1 cup shredded cheddar cheese

Mix  diced chicken and wing sauce together and place in the bottom of a 2 quart casserole dish that has been sprayed with nonstick cooking spray.
 
Place cream cheese, ranch dressing mix, blue cheese dressing, sour cream, garlic powder and celery salt in a mixing bowl and beat with an electric mixer until creamy.

Spread the cream cheese mixture over the chicken. 

Sprinkle Mozzarella cheese and cheddar cheese over cream cheese layer.

Place in a 350 degree oven for 30 minutes or until hot and bubbly.  
Remove and let stand for about 10 minutes.  


Serve with carrot sticks, celery sticks, and tortilla chips or Frito Scoops.


This can also be warmed in a slow cooker.  Assemble as directed and heat on low for about 2 hours,  depending on your slow cooker and how hot it gets.  Don't let it heat too long though, because some slow cookers cook fairly hot and it will dry out!
