Grape Salad!

  

This grape salad is going to be one of our new family favorites.  I made this for my annual Christmas bash this year and those who tried it, loved it.  I had made a version of a 'grape salad' in the past and it was also very good, but this one is just as good and just a bit different.

This salad is great served alongside a meal, as a dessert or even as a fruit salad on a brunch menu. This is also as good in the summer as in the winter months.  It's easy to put together and can be made the night before.  Here is what you will need:


1 8 oz. cream cheese, softened (can use light cream cheese)
8 oz. sour cream
1/2 cup sugar
2 lbs. seedless red grapes, sliced in half
2 lbs. seedless green grapes, sliced in half
8 oz. frozen whipped topping, thawed slightly
1 tsp. vanilla
1 cup brown sugar
1 cup chopped pecans

Blend the cream cheese, sour cream and sugar together until light and fluffy.  Add the sliced grapes and teaspoon of vanilla.  Fold in whipped topping.  Pour into a pretty glass bowl or trifle dish.   Mix brown sugar and pecans and sprinkle over the top.  Chill for several hours or overnight.

  1. There are as many variations to this as there are cooks! Most here use whipping cream, some use the same color grapes, some with toppping, some without, etc. We here in MS have used this salad for so many years I'm surprised the whole country hasn't had it! I was in a hurry one day and dried the grapes with a low setting on my hair dryer (held at a distance).

  3. This can be made with a tub of cheese cake filling in place of the cream cheese, sour cream and sugar...and then follow the rest of the recipe...I am sure both ways are just as delicious..

  5. Is there an alternative to all of that brown sugar? I'm diabetic and that would definetly be a no no. For the 1/2 cup of regular sugar I could use Splenda. I know there are brown sugar substitutes but they are so extremely sweet it's hard to judge how much to use. What do you think it would taste like without using the brown sugar at all?

    2. Sweet N Low makes brown sugar, which is very good. You may want to try it.

    3. There is also Splenda Brown sugar. I use it all of the time.

    4. Google Whey Low Sugar Substitute. It isn't cheap but like you I can't eat sugar nor can anyone in my family. The Whey Low Gold is measured cup for cup like brown sugar. Try their variety pack, it includes the white, the gold, powdered, and one for ice cream and one maple flavored. They cook and bake just like sugar. I have even made homemade 'maple' syrup from the maple flavored one, equal parts water and whey low boiled together.
