Red Apple Inn Chicken!

 
  
This is not a complicated recipe or even an expensive recipe to prepare, but the results are really sort of decadent and it makes it a dish worthy of company or even for a holiday meal.   It's also a dish you can prepare the night before so that you just need to bake it the next day.  I got this recipe from a friend of mine whose son went to elementary school and played baseball with my son. She is a fabulous cook and always had the best recipes. They are from Arkansas and the Red Apple Inn is in the area they came from.     This has been one of our favorite meals for a long time now.   

Here is what you will need for this:

6-8 boneless chicken breasts
6-8 slices of bacon
1 small jar of dried beef
2 cans cream of chicken soup
1  8 oz. block of cream cheese, softened
2 cups sour cream
black pepper
seasoned salt
paprika for garnish (optional)


Spray a long baking dish with nonstick spray.  Layer the dried beef slices in the bottom.  I rinsed this off with warm water first, because it tends to be very salty.

Wrap each chicken breast in a piece of bacon and lay over the dried beef.  Sprinkle lightly with black pepper.

Mix the softened cream cheese, the soup, and the sour cream until smooth and spread over the chicken.   Sprinkle very lightly with seasoned salt.  Cover tightly with foil and place in a 300 degree oven for 2 hours. 
Uncover and turn the oven up to 375 and just slightly brown the top.  This takes about 10 to 15 minutes.

We like this served over rice, but it's also good over egg noodles or mashed potatoes.



It's pretty if you sprinkle it with just a little paprika for color!

  2. I've been making this recipe for years except slightly different. I don't use the cream cheese and i used 1 can of cream of mushroom soup and 1 small container of sour cream. Everything else is the same. It is delicious...one of my favorite recipes.

    1. According to the "Feasts Of Eden" cookbook that I have, the recipe calls for cream of chicken soup, sour cream and cream cheese.

  3. The Red Apple Inn was located in Heber Springs, Arkansas. Years ago it was THE place to stay. Love this chicken recipe.

  4. Where do you buy dried beef? Not familiar with it.

    1. I believe HORMEL is the brand of dried beef and can be found in any grocery store. Just ask your grocer.

    2. Look for it in a jar often around where tuna and other canned meats are. You may also look around the condiments.

    3. If you can't find it in a jar, look in the deli area for prepackaged dried beef.

  6. sounds really good but I have a question--I am not familiar with "Jar of dried beef" you usually show ingrediants--where would I find the dried beef?

  7. The dried beef is found on the aisle with canned tuna, chicken and other canned meats. It's in a little jar and it's usually made my Hormel or Armour. For some reason, it alway seems to be on the top shelf.

  9. The Red Apple Inn has been renovated in recent years...the chef is very talented...we first stayed there (near Heber Springs, Ark.) over 40 years ago. Spent Thanksgiving there about 3-4 years ago and found the food to be fantastic and the crowd was unbelivible, our lodging was good...we may go back this year.

  11. Dawn, it can be done in the slow cooker, I tried it once that way. It was ok, but the sauce didn't thicken up like it does in the oven and you can't sort of brown the top. It works alright though, but for best results do it in the oven. I am not sure what you mean by, how big? If you mean, what size crock pot, just any average size one, like 5-6 quart size. I hope it turns out great for you.

  12. I made this recipe, but substituted cream of celery for cream of chicken, it is good!
    My daughter added Texas Pete to her piece of chicken and loved it!

  14. I have made this recipe for many years; however, I use Canadian bacon instead of the dried beef. It is one of my favorites and is a big hit at dinner parties.

  16. The Red Apple Inn is actually locatedt on Eden Isle on Greers Ferry near Heber Springs. It's at its peak in the fall --- absolutely a gorgeous place.

  17. I rinse the beef and I roll it up in the chicken breast, then wrap with the bacon, everything else the same.
