Just like the writer, to make it a "meal", we add ham chunks, and some vegetable, either squash slices, zucchini slices or asparagus, add mushrooms, and rather than the topping listed, we add french fried onions, my husband loves the cheddar cheese ones! Delicious. I, as did some of you, also added 2 cans of soup.....one cream of chicken and one of the cream of mushroom. However one thing that my recipe called for and wasn't mentioned here, was instead of chips, cereal, crunchy onions etc......was Croutons. My recipe called for a stick of butter melted in a sauce pan, and then add to that a box of Croutons, and I always used the herb seasoned. Stir until the Croutons absorb all the butter and then spread over the casserole and bake. It too was a favorite at the church pot lucks!!!! This recipe was going around in the ear...Love it!!! This recipe was going around in the early 80's when I was raising my 3 small children & I took this to every pot luck event. When I would ask my oldest son what he wanted from me for a Christmas gift every year after he turned 18 & left home ..lol ...he would always reply " your potato casserole - put in a 9x13 pan,cover with tin foil, add a pretty red bow on top & place a gift tag to me " (he didn't want to share ) haha & then when he got engaged he brought his fiancee over & told her to listen up as I recited the recipe to her....lol ....& now they are the ones who bring it to every family event . So this is a very good recipe.... Kids of all ages just love it....sometimes I add green onions with the tops ( sort of like chives ) for the baked potato flavor in a casserole &I've also added real bacon bits.
