I slow cook (crock pot) chicken breast with pepper corns,salt,bay leaf and 1/2 small onion, let cool completely in broth, shred. mix with 1/2 medium chopped onion, abt 1 c grated jack and a little freshly grated parmesan, abt 4 tblsp. Heat corn tortillas in frying pan coated with oil. fill tortillas with meat mixture. roll and place seam side down in baking dish coated with sauce. Sauce: 13 oz can tomatios, drained, 1 4 oz can green chilies (son adds a jalapeno to spice it up) 1/4 Chopped cilantro, 3/4 c whipping cream, 1 egg, salt,blend together in blender or food processor. Sauce bottom of baking dish, place enchiladas seam end down, cover with remaining sauce, making sure you coat ends (will dry out if not), sprinkle with more grated jack cheese (can add cheddar too for appeal, heat through 350 F oven till bubbly and heated through. Scrumptious! Can use 1 3/4 c drained tomatoes instead of tomatios. got this in a cookbook of real Mexican dishes adapted for what was available here in the states at the time.
